75Ohms is not desirable, but should yield accceptable results so long as the elements are in the correct position. Most Yagis actually have a very low impedance (as in 30 ohms). I am surprised your is 75.

It's a Wilson 304475 Wide Band Yagi. I was planning on trying it out for multiple video freq's. I may end up getting the 50 Ohm version and selling this one.
This site offers a PCB log periodic antenna that has ~6dbi gain between 850MHz - 6.5GHz It is probably very similar to what is inside the Wilson antenna, but a lot cheaper ($18) and you can add your own connectors or run your own coax straight to the board.

Can't find any impedance ratings, however at this price you aren't going to be too upset if it sucks.
I wouldn't bother changing it due to impedanece. You probably will not see a difference. Impedance only comes into play at the edge of your range. it is more of a measure to verify the antenna was built correctly in the first place.
