I run my pan on the rudder stick, I have 2 switches setup for it too, one allows me to turn pan off, and the other allows me to turn rudder off, so I can just use rudder, pan, or both at the same time. Usually I fly with the rudder and pan on, that way as I make turns my FOV looks into the turn.

I like that idea of switching.

I use goggles, as I like the immersion but I do have a 7" LCD on my GS for looky-loos and friends.

What kind of radio do you use? This is the exact type of mix I want to do but can't figure it out.

Devo 8. One switch just changes the rudder output to 0,0, the other switch changes the pan output to 0,0, and the mix is enabled via the pan switch #RUDDER -> #AUX3 (Pan channel)
