One of my SMA connectors is missing the little plastic dealie that you put in before screwing the whole thing closed. Is the purpose of this plastic cap simply to isolate the solder-ball at center from the housing of the right angle connector? If that's the case, can I simply cram any old piece of plastic in there to get the same result? Maybe a dried ball of hot-glue, or a nugget of balsa wood?

any local hobby shop will have this it's usually supplied in a kit, it's long strips (circa 100cm) and is usually an inner (which you use for the antenna), an outer and a couple of clevises - which are obviously not needed.
…alternatively the antenna tubes which you see on most rc cars are also good, but the above is cheaper as you get more antennas out of each length.
do I have enough separation between the vtx and the rx? I want to know if it would be okay to put a sander style antenna there. I made a video cause I am bored

look for a product called golden rod. They have one that is yellow plastic inner with a red pvc outter. both work good
